Follow The Directions

01

Step

Pat the chicken dry with paper towels and season generously with chili powder, salt, and pepper. (2 minutes)

02

Step

Heat the olive oil in a large skillet or Dutch oven over medium-high heat. Sear the chicken in the hot oil until browned on all sides, about 3 minutes per side. Remove the chicken from the skillet and set aside. (6 minutes)

03

Step

Add the minced garlic to the skillet and sauté over medium heat until fragrant, about 30 seconds. Stir in the crushed tomatoes and heavy cream. Bring to a simmer and reduce the heat to low. (2 minutes)

04

Step

Add the chopped spinach and basil to the sauce. Cook and stir until the spinach wilts, about 2-3 minutes. (3 minutes)

05

Step

Return the chicken to the sauce. Cook until the chicken is cooked through and no longer pink in the center, about 5-7 minutes. (7 minutes)

06

Step

While the chicken mixture is cooking, bring a large pot of lightly salted water to a boil. Add the penne pasta and cook according to package directions, about 11 minutes, or until al dente. Drain well. (11 minutes)

07

Step

Add the cooked pasta to the skillet with the chicken and sauce. Toss to combine. (1 minute)

08

Step

Serve immediately, garnished with fresh basil.

For a richer flavor, consider using bone-in, skin-on chicken thighs. You'll need to increase the cooking time to ensure the chicken is fully cooked.
A splash of white wine can add depth to the tomato cream sauce. Add it to the skillet after sautéing the garlic, and let it reduce slightly before adding the crushed tomatoes.
If you prefer a smoother sauce, use an immersion blender to blend the sauce before adding the chicken back in.
Feel free to substitute other vegetables, such as mushrooms, bell peppers, or zucchini, for the spinach.
Grated Parmesan cheese is a delicious addition to this dish. Sprinkle it over the top before serving.
