Heat the olive oil in a large skillet over medium-high heat. Add the sausage and cook, breaking it up with a spoon, until browned, about 5 minutes.

Stir in the dry white wine and Dijon mustard, scraping up any browned bits from the bottom of the skillet. Add the gnocchi and half-and-half; bring the mixture to a simmer. Reduce the heat to medium, cover the skillet, and cook for 5 minutes.

Remove the lid and stir in the baby spinach leaves and Parmesan cheese. Cook until the sauce has thickened slightly and the cheese has melted, about 1 minute.

For a vegetarian option, omit the sausage and add a can (15 ounces) of drained and rinsed cannellini beans along with the mushrooms and onions.
Feel free to substitute other types of mushrooms, such as cremini or shiitake.
If you don't have half-and-half, you can use a combination of milk and cream.
To add more flavor, try browning the sausage with a sprig of fresh rosemary or thyme.
