For an even richer flavor, consider using bone-in, skin-on chicken thighs. Simply debone and dice after cooking. A splash of dry sherry or white wine added with the chicken broth can elevate the sauce. If you don't have crème fraîche, sour cream or mascarpone cheese can be substituted. Adjust the amount of jalapeno to control the heat level. Remove the seeds and membranes for a milder flavor. This dish is also excellent served over pasta, rice, or mashed potatoes.
