Preheat the oven to 375 degrees F (190 degrees C). Line a baking sheet with aluminum foil and lightly grease foil.

Using a serrated knife, carefully cut the top off the squash and scoop out the seeds. Lightly salt the inside of the squash. Place the squash, cut-side down, onto the prepared baking sheet.

Bake in the preheated oven until the squash is tender, about 1 hour.

While the squash is baking, cook and stir the sausage, celery, mushrooms, and onion in a large skillet over medium heat until the sausage is browned and the vegetables are tender, 10 to 15 minutes; drain any excess grease.

In a large bowl, mix together the sour cream, Parmesan cheese, beaten egg, and 1/4 teaspoon salt until well combined. Stir in the sausage mixture until fully incorporated.

Once the squash is cool enough to handle, carefully scoop the flesh from the inside, being mindful not to tear the skin; transfer the flesh to a medium bowl and mash well.

Spoon some of the sausage mixture into the hollowed squash, making a ring. Spoon a ring of mashed squash flesh over the sausage mixture. Continue layering in this manner until all of the sausage mixture and mashed squash flesh are used.

Return the stuffed squash to the oven and bake until heated through, 20 to 25 minutes. Let it rest for 10 minutes before serving.

For a vegetarian option, substitute the pork sausage with a plant-based sausage or a mixture of sautéed vegetables and lentils.
To add a touch of sweetness, consider adding a tablespoon of maple syrup or brown sugar to the squash flesh before mashing.
Garnish with fresh parsley or thyme for an added touch of elegance.
