For a richer flavor, use a combination of Gruyere and Parmesan cheese instead of Cheddar and Monterey Jack. Feel free to customize the fillings with your favorite vegetables, such as sautéed mushrooms, bell peppers, or spinach. The tart shells can be made ahead of time and stored in an airtight container at room temperature for up to 2 days. If the crust starts to brown too quickly during baking, tent it with aluminum foil.
