If you prefer a smoother texture, you can blend half of the whole kernel corn before adding it to the mixture. This pudding can be made a day ahead and reheated. Cover and refrigerate after cooling completely. Reheat gently in a preheated oven at 300°F (150°C) until warmed through. Adjust the sugar to your taste preference. If you prefer a sweeter pudding, add an extra tablespoon or two of sugar.
