Follow The Directions

01

Step

Preheat your oven to 325°F (165°C). Lightly grease a 2 1/2 to 3-quart casserole dish. (5 minutes)

02

Step

In a large bowl, gently combine the creamed corn, drained whole kernel corn, beaten eggs, half-and-half, heavy cream, flour, cornmeal, sugar, and melted butter. Season with salt and pepper to your liking. (10 minutes)

03

Step

Pour the corn mixture into the prepared casserole dish. (2 minutes)

04

Step

Bake in the preheated oven for 1 hour, or until the pudding is set and lightly golden brown on top. A knife inserted into the center should come out clean. (60 minutes)

05

Step

Let the pudding cool slightly before serving. This allows the flavors to meld and the pudding to set further. (15 minutes)

For an enhanced flavor, consider browning the butter before adding it to the mixture. This will add a nutty depth to the pudding.
If you prefer a smoother texture, you can blend half of the whole kernel corn before adding it to the mixture.
This pudding can be made a day ahead and reheated. Cover and refrigerate after cooling completely. Reheat gently in a preheated oven at 300°F (150°C) until warmed through.
Adjust the sugar to your taste preference. If you prefer a sweeter pudding, add an extra tablespoon or two of sugar.
