Follow The Directions

01

Step

In a medium saucepan, combine the corn kernels with enough salted water to cover. Bring to a boil over high heat. (2 minutes)

02

Step

Once boiling, reduce the heat to medium-low and simmer until the corn is tender, about 2-3 minutes. (3 minutes)

03

Step

Drain the corn thoroughly and return it to the saucepan to dry slightly. (1 minute)

04

Step

Divide the corn evenly among 10 serving bowls or glasses, using about 3/4 cup of corn per serving.

05

Step

Stir 2 tablespoons of butter into each bowl until melted and the corn is coated. (1 minute)

06

Step

In each bowl, mix in 1/4 cup of lime juice and 1/4 cup of Crema Mexicana. (1 minute)

07

Step

Sprinkle 1/8 teaspoon of chili powder over each serving and season with salt to taste.

08

Step

Top each serving with 2 tablespoons of crumbled Cotija cheese, a dash of hot sauce, and a fresh lime wedge. Serve immediately.

Feel free to grill the corn on the cob before removing the kernels for a smoky flavor.
Adjust the amount of chili powder and hot sauce to control the spice level.
If Crema Mexicana is unavailable, sour cream or even Greek yogurt can be used as a substitute, though the flavor will be slightly different.
For a vegetarian version, ensure your hot sauce is vegetarian-friendly.
Get creative with toppings! Consider adding chopped cilantro, diced avocado, or pickled onions.
