Follow The Directions

01

Step

In a Dutch oven or large pot, heat olive oil over medium heat. Add diced onion and celery; cook, stirring occasionally, until softened and translucent, about 5-7 minutes.

02

Step

Add diced potatoes, cover the pot, and cook until potatoes begin to soften, approximately 5 minutes. Stir in frozen corn, vegetable bouillon cube, dried marjoram, dried parsley, salt, and pepper. Cover and cook until the corn is warmed through, around 2 minutes. Stir in whole wheat pastry flour; cover and cook for another 2 minutes to eliminate the raw flour taste.

03

Step

Gradually stir in almond milk and chicken stock. Cover and bring the mixture to a gentle boil. Reduce heat to low and simmer until potatoes are tender and the chowder has thickened slightly, about 15-20 minutes.

04

Step

Remove from heat and let cool slightly before serving, about 5 minutes. This allows the flavors to meld together beautifully.

For a richer flavor, consider using homemade chicken stock.
If you prefer a smoother texture, you can use an immersion blender to partially blend the chowder before serving.
Garnish with fresh herbs like parsley or chives for added flavor and visual appeal.
This chowder can be stored in the refrigerator for up to 3 days. Reheat gently on the stovetop or in the microwave.
