Follow The Directions

In a large roasting pan, combine the sweet potatoes, butternut squash, rutabaga, delicata squash, onion, red potatoes, and carrots. In a small bowl, mix together the rosemary, thyme, and oregano. (10 minutes)

Drizzle the olive oil over the vegetables, then sprinkle with the herb mixture, tossing to coat evenly. Scatter the bay leaves throughout the vegetables. Finally, drizzle the lemon juice and red wine vinegar over the top. (5 minutes)

Roast in the preheated oven for 1 ½ hours, stirring every 30 minutes, until the vegetables are tender and slightly caramelized. (90 minutes)

Season generously with salt and black pepper to taste before serving. (2 minutes)

For enhanced caramelization, consider adding a drizzle of maple syrup or honey during the last 30 minutes of roasting.
Feel free to substitute other root vegetables like parsnips or turnips based on your preference and availability.
Ensure vegetables are cut into uniform sizes to promote even cooking.
