If the stew is too thin for your liking, create a slurry by whisking together the cornstarch and water in a small bowl until smooth. Gradually stir the slurry into the simmering stew until it thickens to your desired consistency. (5 minutes)

For an extra layer of flavor, consider browning the chourico sausage in the pot before adding the other ingredients. This will render some of the fat and create a richer base for the stew.
Feel free to customize the vegetables according to your preferences. Sweet potatoes, turnips, or kale would all be delicious additions.
If you don't have fresh parsley on hand, dried parsley can be substituted. Use about 1 tablespoon of dried parsley in place of the 2 tablespoons of fresh parsley.
For a spicier stew, add a pinch of cayenne pepper or a dash of your favorite hot sauce.
