Drop rounded spoonfuls of dough onto the prepared baking sheets, leaving about 2 inches between each cookie. (5 minutes)

Let the cookies cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely. (5 minutes)

For a richer chocolate flavor, use dark chocolate instead of milk chocolate.
If you don't have marzipan, you can substitute almond paste, but the texture will be slightly different.
The dough can be made ahead of time and stored in the refrigerator for up to 24 hours. Let it come to room temperature before scooping and baking.
For best results, use a kitchen scale to measure the flour and sugar.
