For extra soft cookies, slightly underbake them. They will continue to bake on the cookie sheet as they cool. Feel free to experiment with different flavors of pudding mix, such as chocolate, butterscotch, or cheesecake. If you don’t have walnuts, you can substitute pecans, almonds, or any other nuts you prefer. Store the cookies in an airtight container at room temperature for up to 3 days.
