For a richer flavor, try using a combination of cremini and shiitake mushrooms. Add a splash of dry sherry or white wine to the filling for extra depth of flavor. If you don't have whipping cream, you can substitute half-and-half or whole milk, but the sauce may not be as thick. These mushrooms can be assembled ahead of time and baked just before serving.
