Create the Sauce: Pour in the dry white wine and bring to a boil, scraping up any browned bits from the bottom of the pan. Reduce heat and simmer for 2 minutes to reduce the wine slightly. Pour in the chicken broth, return to a boil, reduce heat again, and simmer for 5 minutes to allow the flavors to meld. Stir in the heavy whipping cream and sun-dried tomatoes (including a tablespoon of the reserved oil). Simmer gently for 5 minutes, stirring occasionally, until the sauce has thickened slightly.
