Prepare the topping: In a small bowl, combine panko breadcrumbs, melted butter, Parmesan cheese, and a pinch of black pepper. Mix until the mixture resembles coarse sand. Set aside. (3 minutes)

In a separate bowl, combine the cubed chicken with salt, pepper, cayenne pepper, and thyme. Add heavy cream, Dijon mustard, diced ham, and 2/3 of the grated Gruyere cheese. Stir well to combine. (5 minutes)

Transfer the chicken mixture to a small baking dish. Evenly top with the remaining 1/3 of the grated Gruyere cheese. (2 minutes)

Sprinkle the panko mixture evenly over the cheese. Gently press the crumbs into the chicken mixture with the back of a spoon. (2 minutes)

Bake in the preheated oven until the chicken is cooked through, the casserole is bubbling, and the topping is golden brown, about 25 minutes. (25 minutes)

Let rest for 5 minutes before serving. (5 minutes)

For an extra crispy topping, broil for the last 1-2 minutes of cooking, watching carefully to prevent burning.
Feel free to substitute Swiss cheese for Gruyere if preferred.
Add a splash of dry white wine to the chicken mixture for added depth of flavor.
