Follow The Directions

01

Step
5 mins

In a large pot or Dutch oven, combine the chicken broth, shredded chicken, carrots, diced apple, diced onion, sliced celery, Parmesan cheese, and bay leaf. (5 minutes)

02

Step
30 mins

Bring the mixture to a boil over medium-high heat, then reduce the heat to medium-low and simmer gently until the vegetables are tender, about 30 minutes.

03

Step
11 mins

Stir in the orzo pasta. Continue to cook, stirring occasionally to prevent sticking, until the orzo is cooked through but still slightly firm to the bite (al dente), about 11 minutes.

04

Step
2 mins

Remove the bay leaf before serving. Ladle the soup into bowls and garnish with additional grated Parmesan cheese, if desired. (2 minutes)

For a richer flavor, use homemade chicken broth or add a splash of dry white wine during the simmering process.
Feel free to customize the vegetables to your liking. Diced parsnips, leeks, or sweet potatoes would be delicious additions.
If you don't have orzo pasta, you can substitute with other small pasta shapes such as ditalini or acini di pepe.
For a smoother soup, you can use an immersion blender to partially blend the soup before adding the orzo.
