Preheat oven to 350 degrees F (175 degrees C). (5 minutes)

In a medium bowl, whisk together half-and-half, egg, and crumbled sage. Set aside. (2 minutes)

Melt butter in a 12-inch oven-proof nonstick skillet over medium heat. Add chopped onion, celery, salt, and pepper. Cook, stirring frequently, until onion begins to soften and become translucent, about 4 minutes. Pour in chicken broth and bring to a simmer. Stir in herb-seasoned stuffing mix. Add chopped apples, dried cherries, and 1/4 cup of the chopped pecans. Remove from heat and stir in the half-and-half mixture until well combined. Smooth out the stuffing mixture evenly in the skillet. (15 minutes)

Season chicken cutlets with paprika, dried rosemary, salt, and pepper. Place the seasoned chicken cutlets on top of the stuffing mixture, gently pressing down until the tops of the cutlets are relatively even with the stuffing. Sprinkle the remaining 1/4 cup of chopped pecans evenly over the top of the casserole. Lightly coat the chicken with olive oil cooking spray. (8 minutes)

Bake in the preheated oven until the chicken is cooked through and the juices run clear when pierced with a fork, about 30 minutes. An instant-read thermometer inserted into the center of a chicken cutlet should read at least 165 degrees F (74 degrees C). (30 minutes)

Let the casserole rest for 5 minutes before serving. Serve warm and enjoy! (5 minutes)

For enhanced flavor, consider browning the chicken cutlets in the skillet before adding them to the casserole. This adds a lovely depth of flavor to the dish.
Feel free to substitute other dried fruits, such as cranberries or golden raisins, for the dried cherries.
Walnuts or almonds can be used in place of pecans, if preferred.
If you don't have an oven-proof skillet, you can transfer the stuffing mixture to a greased 9x13 inch baking dish before adding the chicken and baking.
