Follow The Directions

01

Step

In a large bowl, gently combine the drained chicken, chopped eggs, Parmesan cheese curls, toasted pine nuts, pickle relish, and chopped white onion. (5 minutes)

02

Step

Add the mayonnaise and coleslaw dressing. Season with salt and freshly ground black pepper to taste. Mix lightly until everything is just combined. (2 minutes)

03

Step

Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld together beautifully. (30 minutes)

04

Step

To assemble the sandwiches, spread a generous amount of the Cheggy Salad mixture onto 5 slices of the sandwich bread. (3 minutes)

05

Step

Top each with a lettuce leaf, a slice of tomato, a few slices of avocado, and a slice of Monterey Jack cheese. (5 minutes)

06

Step

Place the remaining slices of bread on top to complete the sandwiches. Serve immediately, or wrap individually for a picnic-perfect meal. (2 minutes)

For an extra layer of flavor, consider adding a pinch of smoked paprika or a dash of hot sauce to the Cheggy Salad mixture.
If you prefer a lighter sandwich, you can substitute Greek yogurt for some of the mayonnaise.
To prevent the bread from getting soggy, assemble the sandwiches just before serving.
Feel free to use other types of cheese like cheddar or provolone
If you don't have pine nuts, walnuts or pecans can be used as a replacement.

Make sure to drain the chicken really well, or the salad can get watery.
