Step

Bring a large pot of salted water to a rolling boil. Add the penne pasta and cook until al dente, about 7 minutes. Drain the pasta, reserving about 1/2 cup of pasta water. (7 minutes)

While the pasta is cooking, heat a large skillet over medium-high heat. Add the kielbasa coins and cook until lightly browned and slightly crispy, about 5 minutes. Add the butter to the skillet. Once melted, add the diced onion and sauté until softened and translucent, about 4 minutes. Add the minced garlic and cook until fragrant, about 30 seconds. Stir in the broccoli florets and sliced mushrooms. (9 minutes 30 seconds)

Pour in the chicken bone broth, cover the skillet, reduce heat to low, and simmer for 5 minutes, allowing the vegetables to soften. Remove the lid and stir in the heavy cream, grated Parmesan cheese, Italian seasoning, salt, and black pepper. Simmer for another 2 minutes, stirring occasionally, until the sauce has thickened slightly. (7 minutes)

Add the drained pasta to the skillet with the kielbasa and sauce. Toss to combine, ensuring the pasta is evenly coated. If the sauce is too thick, add a splash of the reserved pasta water to reach your desired consistency. Serve immediately, garnished with extra Parmesan cheese, if desired.

For a richer flavor, use smoked Gouda or Gruyere cheese in addition to or in place of the Parmesan.
Feel free to add other vegetables such as bell peppers, zucchini, or spinach.
If you don't have chicken bone broth, chicken broth or vegetable broth works well.
Adjust the amount of Italian seasoning, salt and pepper to your tastes.
