For an even richer flavor, try using browned butter in this recipe. A pinch of freshly ground black pepper adds a lovely warmth. If you don't have dill seed, fresh dill (about 1 tablespoon, chopped) can be substituted, added during the last 5 minutes of cooking. These carrots are also delicious when roasted. Toss with the butter and dill, then roast at 400°F (200°C) for 20-25 minutes.
