Bring a large pot of lightly salted water to a rolling boil. Add the spaghetti and cook according to package directions, or until al dente. (Approximately 10-12 minutes)

While the pasta is cooking, prepare the Caprese mixture. In a large bowl, gently combine the halved cherry tomatoes, mozzarella balls, olive oil, lemon-infused white balsamic vinegar, and finely chopped garlic. Stir in the chopped Thai basil. Season generously with salt and freshly ground black pepper to taste. (Approximately 5 minutes)

Once the pasta is cooked, drain it well, reserving about 1/2 cup of the pasta water. Add the drained pasta to the bowl with the Caprese mixture. Toss gently to combine, adding a little of the reserved pasta water if needed to create a light sauce that coats the pasta. (Approximately 2 minutes)

Serve immediately. Garnish with extra Thai basil, if desired.

For an even more intense lemon flavor, zest half a lemon into the balsamic vinaigrette.
If you can't find lemon-infused white balsamic, simply add a squeeze of fresh lemon juice to regular white balsamic vinegar.
Fresh burrata can be substituted for the mozzarella balls for a richer, creamier texture.
This pasta is best served immediately, but leftovers can be stored in the refrigerator for up to 24 hours.
