Transfer the cooked vegetables to the bowl with the sausage.

Add the olive oil to the hot skillet. Cook and stir the sliced yellow squash and zucchini until they are slightly softened (approximately 8 minutes). Stir in the can of diced tomatoes and Italian seasoning. Season with salt and pepper to taste. Bring the mixture to a boil, then reduce heat and simmer until the squash are tender (approximately 10-15 minutes).

Stir the sausage and vegetable mixture into the skillet with the squash and tomatoes. Increase the heat to high and bring the mixture to a boil. Reduce the heat to medium and cook, stirring frequently, until the liquid has reduced (approximately 15 minutes). Transfer the sausage mixture to a 9x13-inch baking dish and sprinkle evenly with shredded Cheddar cheese.

Bake in the preheated oven until the mixture is bubbly and the cheese has melted and begun to brown (approximately 25-30 minutes).

For an extra layer of flavor, consider adding a pinch of red pepper flakes to the sausage while cooking.
If you don't have spicy sausage on hand, you can use regular ground sausage and add a dash of your favorite hot sauce.
Feel free to experiment with other vegetables such as eggplant or mushrooms.
