Sauté until deeply browned and caramelized, about 5-7 minutes per batch. Remove the browned mushrooms and set aside. Repeat with the remaining mushrooms, adding more butter as needed to keep the pan lubricated. (Cook time: 20-25 minutes)

Add the sliced shallots to the skillet and sauté until softened and translucent, approximately 5 minutes. Return all the browned mushrooms to the skillet. (Cook time: 5 minutes)

Pour the bourbon mixture into the skillet. Cook over medium heat, scraping up any browned bits from the bottom of the pan, until the sauce is slightly reduced, about 2-3 minutes. (Cook time: 2-3 minutes)

Reduce the heat to low. Stir in the heavy cream and simmer gently until the sauce has thickened to your desired consistency, about 3-5 minutes. Season with salt to taste. (Cook time: 3-5 minutes)

For a richer flavor, use a high-quality bourbon.
Don't overcrowd the pan when browning the mushrooms; this will ensure they caramelize properly.
Feel free to adjust the amount of brown sugar to suit your sweetness preference.
This sauce can be made ahead of time and reheated gently over low heat.
