For a vegetarian version, omit the ham bone and diced ham. Add 1 teaspoon of smoked paprika to mimic the smoky flavor. If you don't have a ham bone, you can use 1 teaspoon of liquid smoke for a smoky flavor. For a thicker soup, mash some of the beans against the side of the pot with a spoon. This soup can be made ahead of time and reheated. The flavors will meld and deepen overnight.
