While the rice is simmering, prepare the toasted noodles. Heat the olive oil in a large skillet over medium-high heat. (1 minute)

Sprinkle the fideo noodles evenly into the hot oil. Cook, stirring constantly, until the noodles turn a rich, golden-brown color. Be careful not to burn them. (3-5 minutes)

Pour the vegetable broth into the skillet with the toasted noodles. The mixture will sizzle. Bring to a boil, then immediately reduce the heat to a low simmer. (1 minute)

Cover the skillet and cook until the noodles are tender and all the liquid has been absorbed. (5-8 minutes)

Once the rice is cooked, gently fluff it with a fork to separate the grains. (1 minute)

Add the cooked, toasted noodles and fresh parsley to the fluffed rice. Lightly fold the ingredients together until evenly distributed. (1 minute)

For an even more intense flavor, try toasting the rice in the olive oil for a few minutes before adding the water.
A sprinkle of toasted slivered almonds or pine nuts adds a delightful crunch.
Feel free to substitute vegetable broth with chicken broth for a richer flavor profile.
If you don’t have fideo noodles, orzo pasta can be used as a substitute.
