For an extra layer of flavor, consider adding a teaspoon of cinnamon or nutmeg to the dry ingredients.
If you don't have walnuts on hand, pecans or almonds make excellent substitutes.
To prevent the top of the bread from browning too quickly, tent it with foil during the last 20 minutes of baking.
For best results, use very ripe bananas with brown spots. They're sweeter and easier to mash.
