For extra flavor, try adding a dash of cinnamon or nutmeg to the batter. If you don't have walnuts, pecans or chocolate chips make excellent substitutes. Be sure to use very ripe bananas for the best flavor and texture. For a vegan version, substitute the egg with a flax egg (1 tablespoon flaxseed meal mixed with 3 tablespoons water, let sit for 5 minutes).
