Preheat oven to 350 degrees F (175 degrees C). Lightly spray a baking sheet with cooking spray. (5 minutes)

Lightly spray both sides of a warmed tortilla with cooking spray. Spread about 1 tablespoon of black beans down the center, followed by spinach, 1 teaspoon of cilantro, 1 tablespoon of black bean and corn salsa, and a sprinkle of Monterey Jack cheese and cumin. Roll tightly and place seam-down on the prepared baking sheet. Repeat with remaining ingredients. Sprinkle any remaining cheese over the flautas. (20 minutes)

Serve immediately with a generous dollop of Greek yogurt. (5 minutes)

For an extra layer of flavor, consider adding a pinch of chili powder or a dash of hot sauce to the black bean mixture.
Feel free to substitute other cheeses like cheddar or a Mexican blend for the Monterey Jack.
If you don't have Greek yogurt on hand, sour cream or even a squeeze of lime juice would also be delicious toppings.
To make these ahead of time, assemble the flautas and store them in the refrigerator until ready to bake. You may need to add a few extra minutes to the baking time.
