Make topping: Beat whipping cream in another large bowl with an electric mixer until soft peaks form. Add sugar and coffee granules. Continue beating until whipped cream is firm enough to hold its shape. (10 minutes)

For a smoother cheesecake, ensure your cream cheese is completely softened before mixing.
If you don't have instant coffee granules, you can use finely ground espresso powder for the topping.
To prevent cracks in the cheesecake, bake it in a water bath by placing the springform pan inside a larger pan filled with hot water.
