Heat the olive oil in a large saucepan or Dutch oven over medium heat. Add the chopped onions and pressed garlic. Cook, stirring occasionally, until the onions soften, become translucent, and start to brown, approximately 10 minutes.

Stir in the brown lentils, chicken stock, Italian seasoning, dried parsley, garlic powder, and dried minced onion. Bring the mixture to a simmer over high heat, then reduce the heat to medium-low. Cover the pot and simmer gently until the lentils are very tender, about 1 hour and 30 minutes.

Before serving, season the soup to taste with salt and freshly ground black pepper. Ladle into bowls and garnish with fresh herbs, if desired.

For a richer flavor, consider using vegetable broth instead of chicken stock.
Feel free to experiment with different types of lentils, such as red or Umbrian lentils, for a variation in texture and taste.
A splash of balsamic vinegar or a squeeze of lemon juice at the end can brighten the flavors of the soup.
