While the pineapple mixture cools, combine milk, vanilla extract, softened cream cheese, 1/2 cup sugar, and salt in a blender. Pulse until smooth. Add one egg and pulse until fully incorporated. Add the remaining egg and pulse again until the mixture is completely smooth. (5 minutes)

Pour the cream cheese mixture into the prepared pie crust, smoothing the top with a spatula. Carefully spread the cooled pineapple mixture evenly over the cream cheese layer. Sprinkle with a pinch of ground nutmeg. (5 minutes)

Bake in the preheated oven for 10 minutes. Then, reduce the oven temperature to 325 degrees F (165 degrees C) and continue baking until a knife inserted into the center comes out clean, approximately 40 minutes more. (50 minutes)

Allow the pie to cool to room temperature completely before refrigerating for at least 2 hours before serving. This allows the filling to set properly. (2 hours)

For a richer flavor, use full-fat cream cheese.
Ensure the pineapple mixture is completely cool before adding it to the pie to prevent the cream cheese layer from melting.
If the pie crust edges are browning too quickly, cover them with foil during the last 15 minutes of baking.
A sprinkle of toasted coconut flakes adds a nice texture and flavor.
