In a bowl, whisk together the water, white vinegar, and sugar until the sugar is completely dissolved. (2 minutes)

Stir in the sliced cucumber and red onion into the vinegar mixture. Cover and refrigerate for at least 3 hours to allow the vegetables to pickle slightly. (3 hours +)

Drain the pickled vegetables, discarding the pickling liquid. (2 minutes)

In a large bowl, gently toss the chopped romaine lettuce and baby arugula with olive oil and balsamic vinegar. Season generously with salt and freshly ground black pepper. (5 minutes)

Divide the salad evenly onto two plates. Scatter the drained cucumber and red onion mixture and halved red grapes over the top of each salad to serve. (3 minutes)

For an extra layer of flavor, try adding a sprinkle of toasted walnuts or pecans.
If you don't have time to pickle the vegetables for 3 hours, a quick 30-minute pickle will still impart a lovely tang.
Feel free to adjust the amount of balsamic vinegar to your preference. A high-quality balsamic glaze can also be drizzled over the salad for added sweetness and complexity.
This salad is best served immediately to maintain the crispness of the lettuce and arugula.
