Preheat oven to 375 degrees F (190 degrees C). Butter a shallow, 1-quart baking dish. (5 minutes)

In a medium bowl, combine the melted butter and torn brioche, tossing to coat. Line the bottom of the prepared baking dish with one-third of the brioche mixture. (5 minutes)

In a separate, larger bowl, combine the diced rhubarb, apple slices, dark brown sugar, cinnamon, nutmeg, lemon zest, and lemon juice. Gently toss all ingredients together to ensure even distribution. Allow the mixture to rest for 5 minutes, so the juices can begin to release and meld the flavors. (10 minutes)

Spread half of the rhubarb-apple mixture evenly over the brioche layer in the baking dish. Top with half of the remaining brioche mixture. Spread the remaining rhubarb-apple mixture over the brioche, then top with the last of the brioche. Dot the top evenly with the diced tablespoon of butter. Gently spoon the warm water evenly over the entire top layer. (10 minutes)

Cover the baking dish tightly with aluminum foil. Bake in the preheated oven for 25 to 35 minutes, or until the rhubarb is tender. (30 minutes)

Increase the oven temperature to 400 degrees F (200 degrees C). Remove the foil cover and continue baking for 10 to 15 minutes, or until the top is golden brown and crusty, the rhubarb is soft and bubbling, and the edges are caramelized. (15 minutes)

Remove from oven and let cool slightly before serving warm.

For an extra layer of flavor, consider adding a splash of bourbon or rum to the rhubarb mixture.
If you don't have brioche, challah or even slightly stale croissants can be used as a substitute.
Adjust the amount of brown sugar to taste, depending on the tartness of your rhubarb and apples.
The dessert can be assembled ahead of time and stored in the refrigerator, unbaked, for up to 24 hours. Add a few minutes to the initial baking time if baking directly from the refrigerator.
