Transfer the apple mixture to your slow cooker. Pour the lemon juice and boiling water evenly over the apples. (2 minutes)

Cover and cook on High for 3 to 4 hours, or on Low for 6 to 8 hours, until the apples are very tender and the pudding has thickened to your desired consistency. Stir occasionally during the last hour of cooking to prevent sticking. (Cooking time varies)

If using, stir in the raisins (or dried cranberries) during the last 30 minutes of cooking. Serve warm, and top with a dollop of whipped cream or a drizzle of maple syrup, if desired. (2 minutes)

For a deeper flavor, try browning the butter before adding it to the apples.
A pinch of nutmeg enhances the apple-cinnamon flavor.
Adjust the amount of brown sugar to suit the sweetness of your apples.
If you don't have pearl tapioca, you can use instant tapioca. Add it during the last 30 minutes of cooking.
