Assemble the Salad (5 minutes): In a large bowl, combine the mixed salad greens, chopped cucumber, chopped tomato, crispy tofu cubes, and the remaining minced shallot. For extra crispy tofu, press the tofu between paper towels for 30 minutes before cubing to remove excess moisture.
