For best results, use bananas that are very ripe with plenty of brown spots. They provide the most sweetness and moisture. If you don't have self-rising flour, you can make your own by combining 2 cups of all-purpose flour with 3 teaspoons of baking powder and 1/2 teaspoon of salt. A sprinkle of chopped walnuts or pecans can add a nice textural contrast to the top of the bread. Store leftover banana bread in an airtight container at room temperature for up to 3 days.
