Follow The Directions

01

Step

Preheat the oven to 350°F (175°C). Line a 9x5 inch loaf pan with parchment paper, leaving a 2-inch overhang on the sides. (5 minutes)

02

Step

In a large bowl, mash 4 of the bananas with a fork until mostly smooth, yielding about 1 1/2 cups. (3 minutes)

03

Step

Add the eggs and 1/2 cup of dark brown sugar to the mashed bananas. Stir until well combined. (2 minutes)

04

Step

Gently fold in the self-rising flour until just combined. Be careful not to overmix; a few streaks of flour are okay. Scrape down the sides of the bowl as needed. (5 minutes)

05

Step

Pour the batter into the prepared loaf pan and spread evenly. (1 minute)

06

Step

Slice the remaining banana in half lengthwise. Arrange the banana halves on top of the batter, cut side up. Sprinkle evenly with the remaining 1 tablespoon of dark brown sugar. (3 minutes)

07

Step

Bake in the preheated oven for 50-55 minutes, or until a wooden skewer inserted into the center comes out with just a few moist crumbs clinging to it. (55 minutes)

08

Step

Let the banana bread cool in the pan on a wire rack for 15 minutes before using the parchment paper overhang to gently lift it out. (15 minutes)

09

Step

Slice and serve warm. Enjoy this simple yet satisfying banana bread!

For best results, use bananas that are very ripe with plenty of brown spots. They provide the most sweetness and moisture.
If you don't have self-rising flour, you can make your own by combining 2 cups of all-purpose flour with 3 teaspoons of baking powder and 1/2 teaspoon of salt.
A sprinkle of chopped walnuts or pecans can add a nice textural contrast to the top of the bread.
Store leftover banana bread in an airtight container at room temperature for up to 3 days.
