Roast in the preheated oven for 30-35 minutes, flipping the potatoes halfway through, until they are golden brown, crispy on the outside, and tender on the inside. (35 minutes)

For extra crispy potatoes, avoid overcrowding the baking sheet.
Feel free to experiment with different varieties of potatoes. Red potatoes or fingerling potatoes also work well.
If you don't have za'atar on hand, you can make your own by combining dried thyme, sesame seeds, sumac, and salt.
A squeeze of lemon juice after roasting adds a bright, fresh finish.
