Follow The Directions

01

Step
5 mins

In a large saucepan, melt butter and olive oil over low heat. Add garlic, shallots, and ginger; sauté until fragrant, about 5 minutes.

02

Step
5 mins

Stir in cauliflower, mushrooms, green onions, and parsnip; cook for 5 minutes, stirring occasionally.

03

Step
1 mins

Add pear, beans, dill, and mustard; stir until just heated through, about 1 minute.

04

Step
5 mins

Pour in Chardonnay wine and add thyme sprigs. Increase heat to high and bring to a boil, stirring constantly. Simmer until wine is reduced by half and has a syrupy consistency, about 5 minutes.

05

Step
20 mins

Pour in 14.5oz chicken broth; return to a boil, then reduce heat to low. Simmer, partly covered, until vegetables are tender, about 20 minutes. Let the soup cool slightly.

06

Step
10 mins

Carefully transfer the soup to a blender in batches, filling it no more than halfway. Secure the lid tightly and pulse a few times before blending until smooth. Pour the blended soup into a clean pot and repeat with the remaining soup.

07

Step
2 mins

Stir in heavy cream and thin with additional 1/4 cup chicken broth, if needed, to reach your desired consistency. Season with salt and pepper to taste. Serve hot.

For an even smoother soup, strain it through a fine-mesh sieve after blending.
A splash of lemon juice at the end can brighten the flavors.
This soup tastes even better the next day, allowing the flavors to meld together beautifully. Store in an airtight container in the refrigerator.
Garnish with a swirl of cream, a sprinkle of fresh dill, or a drizzle of olive oil before serving.
