Preheat the oven to 400 degrees F (200 degrees C). Line a large baking sheet with aluminum foil. (5 minutes)

Combine carrots, onion, and garlic in a large bowl. Drizzle with olive oil, season with salt and pepper, and toss to coat. Spread vegetables evenly on the prepared baking sheet. (5 minutes)

Roast in the preheated oven until lightly browned and soft, about 25 minutes. (25 minutes)

Combine 2 cups vegetable broth with half of the cooked vegetables in a blender. Purée until smooth and pour into a large saucepan over medium heat. Purée the remaining vegetables and 2 cups broth with tahini; pour into the saucepan. (10 minutes)

Add curry powder, coriander, ginger, turmeric, and cardamom to the vegetable purée. Stir until warm. Stir in heavy cream and remove from heat. Season with salt and pepper to taste. Ladle soup into bowls and serve. (5 minutes)

For a richer flavor, use homemade vegetable broth.
Adjust the amount of curry powder according to your spice preference.
Garnish with a swirl of cream or a sprinkle of fresh herbs for an elegant presentation.
