Follow The Directions

Heat olive oil in a large skillet over medium-high heat. (2 minutes)

Add the chopped cremini mushrooms and diced red bell pepper to the skillet. Sauté, stirring occasionally, until the mushrooms are softened, have released their moisture, and are beginning to brown, about 15-20 minutes.

Stir in the rinsed and drained pinto beans, taco seasoning mix, sliced green onions, and water. Mix well to combine all ingredients. (2 minutes)

Continue to cook, stirring frequently, until the liquid has evaporated and the filling is nicely thickened, about 5 minutes.

Warm the whole wheat tortillas according to package directions or by lightly charring them over an open flame or in a dry skillet. (3 minutes)

Divide the savory mushroom and bean filling evenly among the warmed tortillas.

Add your favorite taco toppings such as shredded lettuce, diced tomatoes, salsa, avocado, sour cream or vegan sour cream, and a squeeze of lime juice.

For an extra layer of flavor, consider adding a minced clove of garlic to the skillet along with the mushrooms and bell peppers.
Spice level can be adjusted by choosing a mild, medium, or hot taco seasoning mix, or by adding a pinch of cayenne pepper.
To make these tacos gluten-free, use corn tortillas instead of whole wheat.
Other vegetables such as corn, zucchini, or black beans can be added or substituted.
