Preheat oven to 350 degrees F (175 degrees C). Spread almonds onto a baking sheet.

Bake almonds in the preheated oven until lightly toasted and fragrant, 5 to 10 minutes. Let cool slightly.

Bring vegetable stock and quinoa to a boil in a saucepan. Reduce heat to medium-low, cover, and simmer until quinoa is tender and stock has been absorbed, 15 to 20 minutes. Fluff with a fork and transfer to a large bowl to cool completely, about 30 minutes in the refrigerator to speed up the process.

In the bowl with the cooled quinoa, gently mix in the diced cucumber, quartered grape tomatoes, chopped parsley, diced orange bell pepper, crumbled feta cheese, raisins, chopped black olives, and chopped scallions.

In a small bowl, whisk together the fresh lemon juice and olive oil until emulsified. Pour the dressing over the quinoa mixture and stir gently to coat all the ingredients evenly. Taste and adjust seasoning as needed.

For an extra layer of flavor, try adding a pinch of red pepper flakes to the dressing.
Toasted pine nuts or walnuts can be substituted for the almonds.
If you don't have fresh parsley, dried parsley can be used, but reduce the amount to about 1-2 tablespoons.
Make this salad a day ahead for the flavors to meld together even more beautifully. Just be sure to store it in an airtight container in the refrigerator.
