Follow The Directions

01

Step
5 mins

Preheat the oven to 350 degrees F (175 degrees C).

02

Step
25 mins

Heat coconut oil in a large saucepan over medium-high heat. Add red onion, white onion, cinnamon, ginger, garlic, and 1 teaspoon cumin. Cook, stirring gently, until softened and fragrant, about 5 minutes. Add lentils, chopped tomatoes, vegetable stock, and maple syrup. Bring to a boil, then reduce heat and simmer, allowing the flavors to meld together beautifully for 20-30 minutes.

03

Step
20 mins

While the lentil mixture simmers, prepare the sweet potato topping. Place the peeled and chopped sweet potatoes in a large pot and cover with salted water. Bring to a boil, then reduce heat to medium-low and simmer until fork-tender, about 20 minutes. Drain the water and add coconut milk and the remaining 1 teaspoon of cumin. Mash until smooth and creamy.

04

Step
5 mins

Pour the lentil filling into a large baking dish. Gently spread the sweet potato mash evenly over the top. Sprinkle with nutritional yeast for a cheesy flavor.

05

Step
20 mins

Bake in the preheated oven until the top is lightly browned and the filling is bubbly, about 20 minutes. Let it cool slightly before serving.

For an extra layer of flavor, try adding a splash of red wine vinegar to the lentil mixture during the last 5 minutes of simmering.
Feel free to substitute chickpeas or your favorite beans for the lentils.
Garnish with fresh cilantro or parsley for a pop of freshness.
This Shepherd's Pie freezes well. Allow it to cool completely before wrapping tightly and freezing for up to 3 months.
