In a small, microwave-safe bowl, combine the vanilla bean with 2 teaspoons of water. Microwave on high for approximately 30 seconds to soften the bean. (Approx. time: 30 seconds)

In a medium saucepan, combine the sugar and the remaining water. Bring the mixture to a rolling boil over medium-high heat, stirring occasionally to dissolve the sugar. (Approx. time: 5 minutes)

Carefully split the softened vanilla bean lengthwise on a cutting board. Using the back of a knife, gently scrape out the fragrant vanilla seeds. Add both the seeds and the pod to the boiling sugar syrup. (Approx. time: 2 minutes)

Continue to boil the syrup until it has slightly thickened and coats the back of a spoon, approximately 2 minutes more. Be careful not to overcook, as the syrup will thicken further as it cools. (Approx. time: 2 minutes)

Remove the saucepan from the heat and allow the syrup to cool completely to room temperature. This will allow the vanilla flavor to fully infuse the syrup. (Approx. time: 1 hour)

For a richer vanilla flavor, allow the vanilla bean to steep in the cooled syrup for several hours, or even overnight, before removing it.
Store the vanilla syrup in an airtight container in the refrigerator for up to 2 weeks.
Experiment with different types of sugar, such as brown sugar or turbinado sugar, for a unique flavor profile.
This syrup is also delicious drizzled over pancakes, waffles, or ice cream.
