For a richer flavor, use homemade chicken broth. If you don't have sherry, dry white wine or chicken broth can be substituted. To prevent the panko from burning, tent the casserole dish with foil during the last 10 minutes of baking. Leftovers can be stored in the refrigerator for up to 3 days.
