Follow The Directions

01

Step
5 mins

In a small saucepan, pour 1 can of chicken broth and add the cheese tortellini. Bring to a boil and cook until the tortellini is tender but still firm to the bite.

02

Step
10 mins

While tortellini cooks, heat olive oil in a large stockpot over medium heat. Add Italian sausage, chopped onion, minced garlic, and Italian seasoning. Cook, stirring frequently, until the sausage is browned and crumbly.

03

Step
30 mins

Add the cooked tortellini and broth mixture to the stockpot. Pour in the remaining can of chicken broth, tomato puree, and chopped spinach. Cover the stockpot and simmer until the flavors meld together, stirring occasionally.

For an extra layer of flavor, consider browning the Italian sausage with a pinch of red pepper flakes.
Freshly grated Parmesan cheese makes a delicious garnish.
Feel free to substitute ground turkey or chicken for the Italian sausage.
If you don't have fresh spinach, frozen spinach works well (be sure to squeeze out excess moisture).
Adjust the amount of Italian seasoning to your preference.

This soup is so easy to make and tastes fantastic! My family loved it.

Next time, I'll try using spicy Italian sausage for a little more kick!

  • Blair Hartmann

The spinach wilts down a lot, so you can add more if you really like it.

  • Sonny Veum

Simmering it for longer than 30 minutes really deepens the flavor. I made it in the morning and let it simmer all day on low.

  • Leone Runolfsson

I added a can of diced tomatoes for extra texture, and it was a hit!

  • Camila Renner

My kids are picky eaters, but they all ate this soup without complaint!
