For a richer flavor, use homemade chicken broth or a high-quality store-bought broth.
Feel free to add other vegetables, such as spinach, escarole, or small diced carrots, along with the watercress and scallions.
A squeeze of fresh lemon juice at the end can brighten the flavors even more.
If you don't have Romano cheese, Parmesan cheese makes a great substitute.
