For a smoother sauce, consider using a microplane to grate the ginger and mince the garlic into a paste. Adjust the sweetness by adding more or less brown sugar to suit your preference. If you don't have mirin, a teaspoon of sake mixed with 1/2 teaspoon of sugar can be used as a substitute. Store leftover sauce in an airtight container in the refrigerator for up to a week. The flavors will continue to develop over time.
