For the best flavor, use ripe but firm avocados. If your avocados are too soft, the guacamole may become mushy. Taste the tomatillos before adding them, as some can be quite tart. If they are very tart, you may want to add a pinch of sugar to balance the flavors. If you prefer a smoother guacamole, you can use an immersion blender to partially blend the mixture. To prevent the guacamole from browning, press plastic wrap directly onto the surface of the guacamole before refrigerating. This guacamole is best served fresh, but it can be stored in the refrigerator for up to 24 hours.
