Follow The Directions

01

Step
5 mins

Preheat oven to 275°F (135°C). Grease a 15 1/2 x 10 1/2 inch jelly roll pan. (5 minutes)

02

Step
10 mins

Sift the flour into a bowl and set aside. In a medium bowl, cream together the softened butter and sugar until light and fluffy. Add the vanilla extract and egg yolk, mixing until well combined. Gradually stir in the sifted flour until just combined. (10 minutes)

03

Step
5 mins

Spread the batter evenly into the prepared jelly roll pan. In a small cup, lightly beat the egg white. Brush the egg white evenly over the top of the dough and sprinkle generously with finely chopped walnuts. (5 minutes)

04

Step
1 hrs 10 mins

Bake for 1 hour and 10 minutes, or until the toffee bars are golden brown and the topping is bubbly. Immediately cut into 50 bars while still warm. Carefully transfer the bars to wire racks to cool completely. (70 minutes)

05

Step
3 hrs

Store in an airtight container at room temperature for at least 3 days before serving to allow the flavors to fully develop. (180 minutes)

For a richer flavor, consider using brown butter in the shortbread base. Simply melt the butter in a saucepan over medium heat, swirling occasionally, until it turns a nutty brown color. Let it cool slightly before creaming it with the sugar.
Feel free to experiment with different nuts, such as pecans, almonds, or macadamia nuts. You can also add a pinch of sea salt to the topping for a salty-sweet contrast.
Make sure to store the toffee bars in an airtight container, as they can become sticky if exposed to humidity.

I tried using pecans instead of walnuts, and they turned out fantastic. I also added a sprinkle of sea salt on top, which really enhanced the flavor.
