Once done, remove the ramekins from the water bath immediately to prevent overcooking. Allow to cool slightly before serving. (15 minutes)

For an extra layer of flavor, try replacing the almond extract with an equal amount of amaretto liqueur.
Be mindful of the almond extract as it has a strong taste. Adjust the amount to your preference, but don't add too much.
The water bath is crucial for achieving a smooth, creamy texture. Don't skip it!
Freshly grated nutmeg adds a wonderful aroma and flavor, but pre-ground nutmeg can be used in a pinch.
